Here are books:
Williams-Sonoma Kids in the Kitchen: Fun Foods
by Stephanie Rosenbaum
This one looks like it’s for kids who are a little older, but it looks like healthier food.
The Redwall Cookbook
by Brian Jacques, Christopher Denise (Illus.)
This one looks like a great one for older kids as well.

Question–: Does anybody have any suggestions for quick, healthy toddler meals?
My son is 17 months old. We get home in the evenings around 5:30 and he either wants to eat immediately or by 6:00 at the latest. It’s hard to have a good meal ready in that short amount of time so I was wondering if anybody had any suggestions for some quick, healthy meals I can give him. I’m not that great a cook, and when I do it’s never ready before Austin is chanting “bite-bite, bite-bite”… Anybody have any ideas?

I used to do this for quick meals:
Quickly boil frozen veggies until they are warm
Keep boiled eggs in the fridge (still in shell)
Keep applesauce on hand
Keep high fiber bread or crackers on hand
Just put a little of each onto a plate and WHAMMO! Quick toddler meal!

Here are a few options you may want to try or what about using a crock pot so dinner is ready when you get home? another thing I used to do when I worked and was a single mom was on the weekend I would cook a few meals and freeze them for the week and take them out the night before so all I would have to do is warm them up
turkey dogs
grilled cheese
cheese qusadilla
cut up ham or turkey w/ cheese and crackers
cut up fruit
yogurt
veggies
chicken nuggets
fish sticks
mac and cheese
pasta and sauce
raisins
mashed potatoes
chicken pot pie -SO EASY and yummy

My best suggestion is to prepare food ahead of time and freeze it. Ideas are casseroles, lasagnas, anything that freezes well. I also bake extra potatoes and put them in the fridge. You can add some cheese and broccoli or anything, really, to the top, and it’s ready quickly.
I know how it is when toddlers get hungry and need to eat immediately! Sometimes I give them some steamed vegetables first, so they eat the healthiest food when they are most hungry. In fact, I do this with myself too! That way he might be distracted by the snack long enough to wait for the pasta to cook or whatever. Good luck!

I cook ahead or the night before, that helps us greatly!!! We come home and just reheat. Before I started doing this, it was a struggle each night.
Quick stuff-
Spinach and cheese scrambled eggs
Quesadillas with whatever veggies on hand
Fruit and cheese and crackers
Spagetti freezes well and defrosts quickly

When I’m cooking a meal and my children are demanding to be fed, I either open a can of veggies (corn, peas, green beans) or I get some frozen veggies out of the freezer. Both of my children will eat cold/frozen veggies and fresh fruit.
If they are that hungry that they have to be fed ‘now’ they generally eat anything, which is good because they both love frozen broccoli, and corn.

You can make your dinner ahead of time and freeze them. Get tupper ware bowls and make spaghetti and freeze that with some carrots.
Macaroni and green beans. Make whatever you want on the weekend and then VIOLA!! When you get home microwave it for a minute and it is ready…

I usually cook in quantity on the weekends in prep for the work week….but when I don’t …
Grilled Cheese Sandwiches
Steamed Broccoli (Frozen)
Fruit (He loves blueberries and we always have them in the house)
His dinner is ready in 10 minutes flat….and he’s been eating berries while I cook the main entree.
If you have time to cook on the weekends…I usually make rice dishes that keep well for a few days, or I’ll grill a large quantity of chicken and then use it in several recipes…or make use of the crock pot…
The first day, we eat grilled chicken, veggies and a starch,
The second day we use more of the same chicken diced up for chicken tacos
The third day we chop up the rest and have chicken salad sandwiches
The fourth day we boil up some pasta, throw in some veggies and top it with a pasta sauce from the grocery cooler (The “Fresh” sauces)…
And Friday we usually “cheat” with pizza or panda or some other type of take out…just to kind of celebrate the end of the week…lol
It’s a good way to have quick healthy meals during the week…
