Q&A–: Has anyone ever heard of Plum Cake made with plum baby food?
I actually have had this cake before and it tastes great. I’m having trouble finding a recipe for it though. Could anyone help me out? Or am I insane?

PLUM BABY FOOD CAKE
2 c. self-rising flour
2 c. sugar
1 c. oil
1/4 tsp. nutmeg
1 c. pecans, chopped
3 eggs
1/4 tsp. allspice
1/2 tsp. cinnamon
2 jars plums with tapioca (baby food)
Mix flour, sugar and spices in large mixing bowl. Add oil, eggs and flavoring. Mix well. Beat about 3 minutes, add pecans. Spray Bundt pan with Pam. Pour in pan. Bake at 350 degrees until done.
ICING:
1 c. confectioners sugar
A little milk
Stir until blended. Pour on top of cool cake.

“A co-worker always brought this cake for birthdays. It is very simple, quick to make and VERY moist. Use any flavor cake mix with pudding in the mix.”
SERVINGS About scaling and conversions
INGREDIENTS
1 (18.25 ounce) package moist yellow cake mix
1/2 cup white sugar
1 cup vegetable oil
4 eggs
1 (4 ounce) jar apricot baby food
1 (4 ounce) jar plum baby food
1/2 cup chopped walnuts
DIRECTIONS
Preheat oven to 375 degrees F (175 degrees C). Grease and flour one 9 or 10 inch Bundt pan.
Combine the cake mix, sugar, vegetable oil, eggs, apricot baby food and plum baby food. Mix for 2 minutes. Stir in walnuts and pour batter into the prepared pan.
Bake at 375 degrees F (190 degrees C) for 1 hour. Wonderful with a light dusting of confectioner’s sugar or with an almond frosting.

Ready In: 1 hour, 25 minutes
This moist baby food cake is quick and easy and enjoyed during the holidays. Or you could bake the dish as cupcakes for the kids.
Ingredients
2 cups sugar 3 eggs
1 cup oil 2 small jars of plum with Tapioca baby food
2 cups self rising flour 1 tsp cloves
1 tsp cinnamon 1 cup chopped pecans
Directions
Mix together sugar, eggs, oil and baby food in large bowl till blended well. Add flour, seasonings and nuts. Bake in well greased loaf pan or small 8 X 8 pan. Bake at 350 for 60-70 minutes.
A nice buttermilk icing or powdered sugar icing to top the cake would be great addition. You could also add a cup of freshly brewed coffee or a glass of ice cold milk!
