Question–: Toddler meals, what are some good recipes?
I am very frustrated at dinner time trying to find things my 2 and 3 year old will eat. They are very stubborn and I hate throwing out good food so I do cater to them a little too much. They are very fussy. They like macaroni and cheese, spaghetti, veggie meatballs. veggie nuggets, fish sticks, cheese, and other kid friendly food. I am so tired of these boring meals.. Could anyone give me fussy eater recipes that are healthy to some extent?

You need to stop catering to them. They will never learn to eat a variety of foods as long as you continue to make them special meals.
Make meals for the family. Put some in front of your children. Offer enough options that their should be SOMETHING on the table they’re willing to eat. If they’re hungry, they’ll eat. If they aren’t, they won’t. If they leave the food, put it in the fridge and eat it yourself for lunch the next day, or offer it to them again.
(I’m guessing you’re mostly vegetarian? There’s no reason toddlers can’t eat and enjoy hummus or vegetarian chili or lasagna or ‘real’ fish or tuna casserole or eggplant paremsan … or any of a million other veggie/fishy options.)

I really like this website: nttp://www.parentsconnect.com/recipes/index.jhtml for creative, healthy, recipes for picky eaters. They have tons of great ideas! My 5 year old is very picky about what she will eat as well so I can definitely sympathize.

A great option I like is to make chili and add veggies to the chili recipes. I then freeze it in portion sizes for future meals.

My son LOVES cheese so I make lots of things with cheese in it. Baked potatoes with cheese, mac N cheese, grilled cheese, casseroles, maybe find what they love and add it to whatever they are eating (not to your plate if you don;t like it). I melt a little cheese over his meat so he’ll eat it. lol whatever works. Make them at least try a lot of things. You never know what they will like.

My children eat what we eat: sushi, curries, enchiladas, everything. I insist that my two and four year old take one bite of everything in front of them and then they may politely say, “No thank you.” If they don’t want to eat, I don’t force it, but they don’t get any snacks or food until the next meal. Kids won’t starve when they skip a meal, they will eat when they are hungry. I find it plain rude when my students look at foods and declare them “gross” or say that they hate this or that, so I have taught my own kids appropriate respones (I was mortified when my son was two and declared a chicken casserole my aunt prepared, “Yucky!” in a loud voice). My kids are healthy and know that food is for making their bodies strong and giving them energy. They are thankful that we have food to eat and are actually quite adventurous eaters, when given the choice. If you’re sick of boring kids meals, then make a great family meal that you and your husband will enjoy. Your kids will learn by following your example.
