baby was sick, so we had to move thanksgiving festivities to my parents’ house at the last minute.

My dad whipped together this fantastic emergency concoction that he’s actually been making on a weekly basis for months now. It puts to work a lot of ingredients you may find lazing around in your own kitchen: Two cans of Campbell’s Chicken Noodle Soup, a bag of frozen veggies (peas, corn, carrots), 1 chopped up chicken breast grilled with "cajun" seasoning, 1/2 breakfast sausage patties (broken up), 10-minute white rice, 10-minute brown rice, elbow macaroni, salt to taste.

"It tastes like leftovers right away," he boasted, and deliciously it did.

"Instant leftovers" is what he calls it (not to be confused with a childhood favorite at my house, "leftover surprise").

Beef Stew Classics

* 3 pounds of stew beef – cut into 1 and 1/2 inch cubes
* 1 large onion – diced
* 4 tomatoes – cut into wedges
* 1/2 pound of baby carrots
* 1 red pepper – cut into 1/2 inch strips
* 1 pound of small mushrooms – cleaned
* 2 small turnips – cut into chunks
* 2 tablespoons of instant tapioca
* 1/2 cup of dry bread crumbs
* 2 cups of red wine
* 1 teaspoon of salt
* 1/2 teaspoon of black pepper
* 1/2 pound of frozen small pearl onions

Put all the ingredients except the pearl onions in a Dutch oven with a tight-fitting lid.

Bake in a preheated 325 degree oven for 3 1/2 hours. Don’t peek!

Add the pearl onions after the stew is removed from the oven.

Serve with crusty bread.

I was a bit surprised to notice that both my fridge and freezer are the most full they have ever been. Maybe this is why you shouldn’t go grocery shopping when you’re hungry and things are on sale…

    There’s also a tub of some kind of chocolate with fudge swirls stuff in the back behind the breyer’s, but it didn’t get a note because I was lazy and it’s hiding with the extra hamburger buns.
