Revamped CYSS program means the "SKIES" the limit for Wainwright children

FORT WAINWRIGHT, Alaska – Fort Wainwright’s Schools of Knowledge, Inspiration, Exploration and Skills Unlimited program is back by popular demand and better than ever, according to Amy Nott, SKIES program manager.

After taking a few months to revamp the program, incorporate more competitive contracts to make classes more affordable and change the class length and times offered to include weekend and evening classes, the new SKIES schedule hit the streets last month and offers parents an innovative way to add to their children’s development.

"SKIES is an enrichment (program) for children offered outside of their school, preschool or the center or wherever they attend," Nott explained. "And it also gives children who stay at home a supplement."

With programming for children ranging in age from six months to 18 years, SKIES has something for everyone. And with highly qualified instructors who have trained on the subject matter, fun activities, lots of smiles and purposeful instruction, parents can ensure their children will benefit from their SKIES experience, said Gerri Withers, Child, Youth and School Services parent and outreach services director.

"The classes are based on developed lesson plans so there are learning objectives and outcomes," she said. "Everyone is concerned about the growth and development of their children and they want the best opportunities possible. What we try to do is provide the military community these options at reasonable prices and times that work best for them."

Focusing on skill development, SKIES classes start out with simple tasks that take students through basic skills and then get more advanced as they progress. The goal is to fine tune skills so parents can find out what their children really want to pursue, Nott said.

"SKIES will help their children grow and develop and figure out which activities they’re interested in, and have a good time," she said.

SKIES is just one part of the overall CYSS goal to provide quality, affordable and reliable programming and care for children at Fort Wainwright, Withers said. "CYSS as a whole really offers opportunities for children from birth all the way to 18, whether it’s recreational, childcare, parenting classes; we cover the whole gamut," she said.

Classes are offered each month and will generally last for eight weeks, with alternate timeframes so parents can choose a class that fits their schedules.

Registration is currently available for October classes which include the following programs: parent and child sign language for ages 6 months and older; parent and child toddler music for ages one and a half to three years; beginning art for ages two to three years; preschool art #1 for ages three to five years; preschool music for ages three to five years; cooking and nutrition for ages six to 12 years; introduction to sewing for ages six to 12 years and fiber arts – knitting and crochet for ages six to 12 years.

Q&A–: cooking with toddlers?
Im looking for some very simple cooking activities that i can do with children of 2 years old. I work in daycare and there will be approx 10 children present, thats y i need something quite simple, something that they can do themselves! (with supervision & help!)

So far we have made mars bar buns, rice crispy buns and fruit salad!

Any sugestions?

Not 2 worried about anything messy!

My daughter loves to make Ants on the Log!! Just have them spread peanut butter (be careful of those with allegries, you can also use cream cheese) on celery and put raisins on top!

Something way fun is dirt pie. Get chocolate pudding get oreo cookies, graham cracker crust and gummie worms.

Make the pudding, smash about 3/4 of oreos, mix the crushed with the pudding, put in crust. Take the gummie worms and cut into small bite size (small enough for a 2 year old…as get older can keep whole) with a pari of scissors. (makes the cutting way easier)
Then let them push the worms into the pudding mixture with their fingers, then top with the rest of the oreos…pushing them sideways into the pudding.

Put in fridge for a short time…just till chilled and then let them dig in.

We have a dollar tree here and I did this for my sons birthday and we got the little doggie dishes…washed them…and served the dirt pie in the dog dishes.

Lots of fun and yummie too.

Make ice cream!
We used to do this in girl scouts and camping. Great fun and a great treat!
You can also make butter using a similar recipe.

I’ve included 2 websites, but there are plenty out there!

eta – Oooh! How could I have forgotten “Dirt Pie”! You can also do these in flower pots if girls want to make flowers instead of bugs and worms! (Or is that sexist?) THey can make flowers from twizzlers and that fruit tape stuff.

Two that my son LOVES to do are banana bread and play dough. For the play dough, here’s a really good recipe:

Earth Friendly Play Dough

• 1 cup flour (not self-rising)
• 1/2 cup salt
• 1 cup water
• 1 tablespoon vegetable oil
• 1-1/2 teaspoons cream of tartar

Mix in saucepan over low heat. (It does not have to heat long.) Dough is ready when it rolls into a ball. Keep dough fresh in an airtight container. If you need to make different colors, add food coloring while mixing over heat.

If you’re looking for something to make that’s edible and the kids can do themselves, another activity my son likes is “decorating” crackers with peanut butter, cream cheese, cheese slices, apple slices, raisins, dried cranberries, etc.

Jared’s take on Chicken Adobo
Serves 3 to 4

Ingredients
6 to 8 Chicken Thighs (skin left on)
½ cup Soy Sauce (or low-sodium Soy Sauce)
1 cup White Wine Vinegar
¼ cup Sake (or Mirin)
2 tbsp Light Brown Sugar
1 tbsp Whole Black Pepper Corns
3 Bay Leaves
6 to 8 Large Garlic Cloves – coarsely chopped (yes, that’s a lot of garlic!)
1 to 1½ inch Ginger – coarsely chopped

Utensils
• Measuring Cups & Spoons
• Mixing Bowl
• 6-quart Sauté Pan with Lid
• Tongs

The Method
Combined all of the ingredients mentioned above, with the exception of the chicken, in a mixing bowl. Use low-sodium Soy Sauce if you prefer or dilute with water if the sauce is too salty for your taste. You can marinate the chicken in the sauce ahead of time or cook all at once.

Pour the sauce into a 6-quart sauté pan. Heat the sauce until boiling. Once it is boiling add the chicken and parboil for about 5 minutes, turning the pieces over half way through the cooking process.

After the 5 minutes, turn the chicken once more and reduce the heat to medium-low to low. Cover the pan completely and simmer for 45 minutes to one hour or until chicken is tender and falling off the bone. Turn the chicken about every 10 minutes while it is cooking.

Serve over sticky rice (steamed sushi rice).

    Nice pic, where did you get your adobo recipe? I think you are using too much soy sauce and vinegar…normally its 1/4 to 1/2 cup of soy and vinegar… you can add potatoes as well…

    Perhaps, but I’ve been told that adobo is like potato salad or coleslaw recipes, it differs slightly from region-to-region or even household-to-household. I’ve seen many different versions on the internet as well.

    The initial recipe was given to me by a co-worker who’s father was a chef from the Philippines. The recipe and method of cooking has morphed over the years. What I offer here is how I interpret the dish and what my family enjoys.

  4. Hey there! Yes, to tell the truth, adobo varies from household-to-household here in the Phils. Anyway, here’s some additions that you might like to put in your adobo recipe (well, this is according to Filipino tastebuds that is, but hey).

    You can choose one or more:
    - boiled quail eggs (just add when the adobo is almost cooked)
    - sauteed mushrooms (saute them before you add the chicken)
    - pan-fried potatoes or home fries
    - Fried diced Tofu
    - bell peppers
    - some pickle relish (as a condiment)

    My friends like to eat adobo with garlic rice and fried egg though (talk about cholesterol) and then down it all with beer. :p

    And oh, if you’ve got some leftover adobo, you can just flake them with a fork and then flash-fry them till their crispy! This’ll give you a heart-attack, but it’s definitely worth it! :p
