This was my favourite course. I cannot tell you how much it still excites me. There wasn’t any apparent modernist cooking techniques applied (maybe there was, but nothing frozen, foamed, shaped, etc), just the most incredible flavours and textures I’ve ever experienced from the sea creature.
I had read, heard, been curious about elvers. "Legends" of the baby eels, how rare they are, how incredible they tasted. I never thought I would ever have the opportunity to sample such a rare delicacy – and delicacy they are, like tiny tender threads(!!) of moist, milky sweet seafood taste (think really well made fish stock just overflowing with clean fish flavour) that slipped down the throat. I could not imagine a more beautiful thing in my mouth. A thick broth-like creamy essence coated each strand, creating a sensation that I can only liken to the Cantonese "yu tong migh seen" (aka rice vermicelli in fish broth), but so much richer, tender and delicious.
Perhaps it was also because the flavours and textures of this course reminded me of one of my go to comfort foods, but I just couldn’t (and still can’t) stop singing it’s praises. It wasn’t just that it was well prepared (it’s the first and possibly last time I’ll ever have this rare delicacy), it wasn’t just because it was an expensive ingredient, but it was the fact that the restaurant spared no expense/means to give its diners the very best, truly rare experience. Wow.

An easy one today, mostly pre-prepared foods.
The main dish is the extra serving of curried turkey tenders I made previously, which I’d frozen, along with ginger sesame carrots, also frozen. Both over basmati rice. Rice is the major grain we eat because of the gluten-free thing; I intend to experiment more with quinoa pilafs this year, and also to use more sweet potatoes and potatoes for starchy variety.
The soup is Imagine’s Creamy Potato Leek Soup with some fresh ground black pepper and chives.
I was going to steam him some vegetables, but he asked for a salad, which surprised me as he doesn’t usually like a lot of greens, but he’s been liking the salads. This had a lemon juice, red wine vinegar, and olive oil vinaigrette with lemon zest, fresh garlic, red bell peppers, cucumbers, red onions, and radish, along with baby green mix. He doesn’t really like bitter greens, so having an intrinsically sweet salad dressing, or some sweet fruits and vegetables in the salad, helps a lot for getting him to like them. Either that or having a very strongly savory salad dressing. Tossing it ahead of time means I can use less dressing, which means less oil overall, and the leaves are all coated with flavor.
I was kind of slow making it and should consider making some of these vinaigrettes the night before; I could marinate everything but the greens in with them and then just mix with the greens in the morning.
The sweet is just a cut up kiwifruit and an organic raspberry lollipop so it’s not just kiwifruit. I sprinkled a little lemon juice on the kiwifruit, though it doesn’t brown, but more for flavor.

!!Good advice :At about six months, babies starts to eat real food. Rice cereal and mushy veggies turn to combinations of fish, meat, eggs, legumes, and vegetables—yep Just Add Water Lunch

Soup!
baby spinach, mung bean sprouts, dried oyster mushrooms, miso paste, frozen pre-steamed veggie dumplings
Quickest lunch to pack ever. And to prepare! I also like to make this with udon noodles instead of dumplings sometimes, but today is dumpling day! You can really use any veggies and broth paste you want.
